Ingredients

For 6 portions :

  • 120g dark chocolate
  • 80ml of boiling water
  • 4 eggs
  • 20g granulated sugar
  • 1g of salt

An electric whisk/mixer is absolutely needed for this recipe

Instructions

  1. Separate the eggs, put the yolks in a large mixing bowl and the whites in a medium mixing bowl
  2. Break the chocolate apart in very small pieces using a knife and add it into a medium mixing bowl
  3. Add the required amount of boiling water to the chocolate and whisk until completely melted and smooth (you made a water ganache!)
  4. Mix the egg yolks and 1/2 of the sugar together using a whisk and then mix in the ganache using a spatula
  5. Using an electric whisk, mix the white, adding the rest of the sugar little by little, until you get a dense foam that softly peaks
  6. Using a spatula integrate a 1/4 of the white foam into the chocolate mixture, you need to be gentle by folding the foam into the mixture in 3 to 4 batches, this is key to a having a nice mousse texture
  7. Finally pour the mousse into 6 individual containers or a large bowl and let sit in the fridge at least 3h, best to eat within 24h
