Ingredients
For 2 persons
- 1lb salmon fillet
- 2 thick bacon strips
- 4 medium sized potatoes
- 2 cups oat milk
- 1 cup broth (chicken or veggies)
- 2 celery stalks
- Dill
Instructions
- Heat the oven to 350F
- Lay the salmon with a little olive oil in a baking disk
- Cook in the oven for 15 minutes
- Peel the potatoes and dice to a small dices
- Mix the broth, milk and some salt in a pot
- Bring to a boil on a stove, add the potatoes, then to a slow rolling boil for 12 minutes and finally to a low simmer
- Reserve 2/3 of the potatoes and blend the rest using an immersion blender
- Chop some dill and add to the pot, add back the reserved potatoes as well
- Mix and season to taste
- Once the salmon is back to a temperature you can handle with your hand, break it into small chunks into the pot
- Mix the salmon in the chowder
