Ingredients

For 2 persons

  • 1lb salmon fillet
  • 2 thick bacon strips
  • 4 medium sized potatoes
  • 2 cups oat milk
  • 1 cup broth (chicken or veggies)
  • 2 celery stalks
  • Dill

Instructions

  1. Heat the oven to 350F
  2. Lay the salmon with a little olive oil in a baking disk
  3. Cook in the oven for 15 minutes
  4. Peel the potatoes and dice to a small dices
  5. Mix the broth, milk and some salt in a pot
  6. Bring to a boil on a stove, add the potatoes, then to a slow rolling boil for 12 minutes and finally to a low simmer
  7. Reserve 2/3 of the potatoes and blend the rest using an immersion blender
  8. Chop some dill and add to the pot, add back the reserved potatoes as well
  9. Mix and season to taste
  10. Once the salmon is back to a temperature you can handle with your hand, break it into small chunks into the pot
  11. Mix the salmon in the chowder
  12. Enjoy!
